毛豆之營養與效用
 

 

 

毛豆 (又叫支豆) 含豐富植物蛋白、多種有益的礦物質、維生素及豐富的食物纖維。其中蛋白質不但含量高,且品質優可以與肉、蛋中的蛋白質相媲美,易於被人體吸收植物食物中惟一含有完全蛋白質的食物。


毛豆中的脂肪含量高於其他種類的蔬菜以不飽和脂肪酸為主,有人體必需的亞油酸和亞麻酸,可改善脂肪代謝,有助降低膽固醇。
毛豆改善便秘,含有能清除血管壁上脂肪的化合物有利於降低血壓和膽固醇。

毛豆中的鉀含量很高,夏天吃可以幫助彌補出汗過多而導致鉀流失 (鉀流失引起疲乏無力和食慾下降) 毛豆中的鐵易於吸收可作為兒童補充鐵的食物之一。

毛豆中含有天然植物雌激素,在人體內具有雌激素作用,可以改善婦女更年期的不適,防治骨質疏鬆。

毛豆營養豐富均衡,含有有益的活性成分,經常食用,對女性保持苗條身材作用顯著;對肥胖、高血脂、動脈粥樣硬化、冠心病等疾病有預防和輔助治療的作用。

毛豆的吃法,除了直接加鹽煮吃,還可以將剝好的豆與臘肉、辣椒、豆腐乾等一同炒食,或加五香調料等製成干豆。 

(注意 : 一定要煮熟或炒熟後吃 ) 對黃豆有過敏體質者不宜多食。
